Happy Cinco De Mayo! Today in the kitchen I’m mixing up Coconut Lime Margaritas! The perfect balance between sweet & citrus-y! Consider these Pina Colada meets Margarita, they are smooth and delicious!
When having a mexican feast at home, making margaritas is one of my favorite parts! I much prefer making them at home with fresh fruit and juices.
Another great alternative is always Sangria. The flavors of either drink lend them self well when you’re talking tacos and fajitas! Muddling fresh fruits or blending them right into the cocktail is my only rule!
Coconut Lime Margaritas
To make these deliciously refreshing drinks you’ll need limes, cream of coconut, tequila, triple sec, and a little pineapple juice!

I’m making these frozen, you can easily make them on the rocks by simply mixing the ingredients and serving them over ice!
Start by rimming your glasses! I am using shredded coconut for the rim. Place Toasted Coconut on a plate. On a separate plate place a little lime juice. Dip the top of your glass into the lime juice and then into the toasted coconut.
Get your blender ready. Add about a cup of ice to the blender. Then pour in your cream of coconut. Add the lime juice, tequila, triple sec, and Pineapple Juice.
Blend on high until smooth. If your drink is too thin add more ice. If it’s too thick feel free to add a little more tequila or just pineapple juice to loosen it up. After it’s smooth (no ice chunks!), pour it into your coconut rimmed glasses! Garnish drink with a lime wedge and enjoy!

Rub lime juice on the rim of your glass. Dip the rim of the glass in shredded coconut. Mix all of your ingredients in the blender. Pour your frozen margarita straight into the glass. Garnish with a Lime Wheel. Enjoy your refreshing frozen margaritas!Coconut Lime Margaritas
