I’m spending this week putting together my Thanksgiving recipes. To me Stuffing or Dressing is an absolute must . This Drunken Chorizo & Sage Dressing is one of my favorites! It’s completely full of flavor. Plus, it’s so easy to make! With only six ingredients and minimal steps!

Savory Chorizo
Heat a pan on the stove with olive oil. Add your Chorizo and one small chopped onion. Let it cook until the pork is brown and the internal temperature on it, is 165 degrees. Set your meat aside.

Drunken Chorizo & Sage Dressing
After you cook the chorizo, the “hard” part is over! Pre heat your oven to 350. In a casserole dish pour two boxes of “stuffing mix” in.
Add your melted butter and your beer! The beer gives the dressing flavor and the carbonation in it will actually help hydrate the bread cubes and minimize cooking time!

Next, add the cooked chorizo and your chopped Sage, mix well.

Bake in the oven for approximately 30 minutes. This will cook the alcohol content out of the dressing. The dressing should be a nice golden brown color and not dry at all.

The beauty of this dressing is it takes about thirty minutes to cook, but you end with so much flavor guests will think it was roasted inside a turkey for hours!

Cook the Chorizo and Onion together in a sautee pan. Once it reaches 165 degrees, set aside. Pour two boxes of "Stove Top" Stuffing mix into a casserole dish. Add the beer and melted butter. Mix in your Chorizo/Onion. Top with Sage. Bake at 350 degrees for thirty minutes. Make sure it has reached 165 degrees to ensure the alcohol has cooked off.
