I made this Easy Mango Salsa to top my One Sheet Pan Salmon with Coconut Cauliflower Rice. It also makes an AMAZING appetizer or healthy snack, Plus it’s perfect for fish tacos!

And did I mention how easy it is??!! All you need are fresh mangos, cilantro, red onion, red pepper, gralic powder, and lime juice.
Easy Mango Salsa
To make this salsa first, start by peeling your mangos, and chopping them into small cubes (separating them from the seed). Place your mango cubes into a bowl.

Now, make sure the rest of your vegetables are chopped as well – the onions, red pepper, and yellow pepper. I chopped them all in about the same size cubes. Place them in the bowl as well.

Add cilantro, garlic powder, and cumin.
Finally, squeeze the lime half on top and mix, mix, mix!

You can add extra cilantro on top and serve on top of your favorite dish or beside tortilla chips as a snack!
