Easy Overnight Breakfast Enchiladas with Hatfield®

Easter is right around the corner and I can’t wait! I’m already making plans to ease the Holiday busyness. Starting with these Easy Overnight Breakfast Enchiladas with Hatfield. One of my top priorities is smoothing out the menu. Having a filling and delicious breakfast is important to me, but I also don’t want to be running around the kitchen like a crazy person! That’s why it is so important that breakfast be easy, with minimal prep time. I don’t want to miss out on a single minute with friends and family! These Easy Overnight Breakfast Enchiladas with Hatfield are perfect because they are prepped entirely the night before!

After the dish is prepped, you can throw it right into the fridge! Voila! Easter morning preheat the oven and put in your Breakfast Enchiladas.

The Best Easter Brunches Start with Hatfield

To make these enchiladas I’m using Hatfield Ham Steaks (Classic Ham Steak). I picked mine up at my local Acme, right in the meat section, near the bacon!

Hatfield products are so versatile and can be incorporated into Breakfast, Lunch, or Dinner recipes! They add flavor to any dish. Plus, you don’t have to be a cooking expert to use them. The Hatfield Ham Steaks I’m using are fully cooked and are delicious heated up on the grill, stove, or even the microwave! I’ll be dicing my Ham Steaks and putting them right into the middle of these Easy Overnight Breakfast Enchiladas !

Easy Overnight Breakfast Enchiladas

Start by dicing your Ham Steak. Set aside.

Then, spray a baking dish with non stick cooking spray.

In a bowl, mix your chopped onions, diced ham, and shredded cheddar cheese. Set aside about a Tbsp of the shredded cheese and diced ham to top the enchiladas with later!

Next, take a tortilla fill it with about a Tbsp of Diced Ham mixture. Roll up the tortilla. Place it in the baking dish. Repeat, placing each filled tortilla one next to the last, in a row. Fill up the dish (usually about 5-8 enchiladas), it all depends on how big your dish is.

In a separate bowl mix your half & half and eggs. Pour this mixture right over top of your enchiladas. Make sure it coats each tortilla at least a little as it seeps down into the dish. This will ensure your tortillas brown properly. The rest of the mixture will naturally sit at the bottom almost like the enchiladas are just soaking in it!

Next, you can cover your dish and place it in the fridge overnight.

Easter Morning Breakfast

Fast forward to the next morning, when you’re ready to bake the Enchiladas preheat your oven to 350 degrees. Uncover your enchiladas . Place the dish in the oven. Bake for about 20 minutes.

After about twenty minutes, take them out and top them with your remaining shredded cheddar cheese & more diced ham. Place back in the oven for another 5-10 minutes.

The dish is done when your tortillas are a golden brown and the egg mixture is no longer runny. It should be solid and temp to at least 160 degrees.

Remove them from the oven. Top with diced tomatoes, green onions, cilantro, and sliced avocado. Serve immediately!

I love serving these with some fresh juice & fresh fruit! It’s the perfect way to start your day!

Easy Overnight Breakfast Enchiladas with Hatfield

Serves: 5-8 Cooking Time: 30 minutes

Ingredients

  • 1 Hatfield Ham Steak
  • 1/2 Cup Diced Onions
  • 1 Cup Shredded Cheddar Cheese
  • 5-8 Flour Tortillas
  • 4 Eggs
  • 1 1/4 Cup Half & Half
  • Optional for garnish-
  • 1 Avocado sliced
  • 2 Tbsp Chopped Green Onions
  • 2 Tbsp Chopped Tomatoes
  • 1 Tbsp Cilantro

Instructions

When ready to bake, preheat oven to 350 degrees.

Uncover and bake for about twenty minutes.

Top with remaining shredded cheddar cheese and more diced ham.

Place back in oven for another 5-10 minutes. It's done cooking when tortillas are golden brown and eggs are solid (temping to 160 degrees or higher).

Top with diced tomatoes, green onions, cilantro, and avocado slices!
