Mini Chocolate Egg Blondies

We just finished celebrating Easter over here, but the house is still covered in plastic eggs and to be honest, more chocolate than either of us need;)… I kind of have an obsession for Mini Cadbury Eggs. So, when I saw the ten pound bag at Costco, I had to buy them. Just kidding, it wasn’t ten pounds. But, it might as well have been right? Because, no matter how many handfuls I eat of them they don’t seem to be going anywhere. So, today I’m making Blondies. I’m adding in these lovely mini Cadbury creme eggs & solid chocolate eggs. Blondies are already rich and delicious. The candy eggs just kick it up a notch! Plus, they are so simple and hard to mess up!

 

 

Blondies

 

Your oven should be pre heated to 350°

 

First, in a bowl combine your light brown sugar & melted butter. Next, add in the eggs and than the flour. Finally, Add the vanilla, salt, & baking powder. Mix thoroughly. Easy right?

 

Now it’s time to add the candy. You’ll want to make sure you save some for the top as well. Fold in your desired amount of creme eggs & chocolate eggs and stir lightly, mixing them around. Line a baking pan with parchment paper, spraying it throughly with cooking spray. You can now transfer your batter into the pan, smoothing it down. Finally, top it  sporadically with the rest of the candy. I used about 6 Creme Egg halves on the top and about 10 Mini Chocolate Eggs on the top. How much chocolate you use in the Blondies overall is entirely up to you!

 

 

Place them in the oven and set the timer for about 40 minutes. Make sure to turn them half way through. When they have completely set and are nicely browned test them with a toothpick, To see if it comes out clean! The inside will be on the softer side while the top will come out crispy and flaky. As soon as they’re done cooking they’ll need to cool for awhile! Than they can be cut into squares and enjoyed!

We also ended up storing half the batch in the freezer for treats at a later date to be determined;)

Mini Chocolate Egg Blondies

Serves: About 10-12 Cooking Time: 40 minutes

Ingredients

  • 2 eggs
  • 2 cups of all purpose flour
  • 2 cups light brown sugar
  • 1 1/2 tsp vanilla
  • 1 cup butter (melted)
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • About 6-8 Mini Cadbury Creme Eggs cut in half
  • About 1 cup Mini Cadbury Chocolate Eggs

Instructions
