Sometimes I love spending hours in the kitchen but, other days I just don’t have the time to. I just want to make something for dinner that’s going to come together easily and also not leave a huge mess of dishes to clean up when I’m done! That’s where this One Sheet Pan Salmon with Coconut Cauliflower Rice comes in! I’ll be in and out of the kitchen in no time with a delicious meal on the table that the whole family can enjoy!

This is so easy to make! You can literally throw it all right in the same pan! Cook it in the oven together and when it’s finished voila! Remove it from the oven and top with mango salsa.

I’m using Gorton’s Natural Catch Grilled Salmon. I love using this because it has no artificial ingredients, no gmo ingredients, and it’s 100% sustainably wild-caught. With the help of Gorton’s it’s easy to throw together a quick, easy, and delicious meal!

To make this one sheet pan meal you’ll need: Gorton’s Grilled Salmon, Minced Cauliflower, Vegetables (I’m using Asparagus & Broccoli – you can use whatever you have on hand!), Coconut Milk, Cilantro, and some seasoning!
One Sheet Pan Salmon with Coconut Cauliflower Rice
Start by preparing your Coconut Cauliflower Rice. To do so you’ll need finely minced cauliflower. Place it in a bowl and add 1/4 Cup of Coconut Milk, a squeeze of lime, and a pinch of cilantro. Stir the Cauliflower.

Pre heat the oven to 425 degrees. Place the Coconut Cauliflower Rice on the sheet pan spreading it evenly. Now add your Salmon piece by piece. I used two packages (4 Salmon Pieces total).

Finally, add some asparagus spears and pieces of broccoli to the pan. Sprinkle the whole pan with a little garlic powder.
Place in the oven and bake for about 18 minutes – turning the pan half way through!
At this point your Salmon should be cooked, and the “Rice” & veggies should be nice and tender!

Using a spatula place the Cauliflower Rice & Veggies in a bowl, place the Salmon on top.

Finally, top the dish with a Mango Salsa! I made my own, it was very easy, and you can make my Easy Mango Salsa Recipe in about five minutes or you can even buy an already prepared Mango Salsa from the store!

Place the Coconut Cauliflower Rice on the sheet pan spreading it out evenly. Add Salmon piece by piece. I used two packages (4 Salmon Pieces total). Add asparagus & broccoli to pan. Sprinkle pan with garlic powder (optional). Bake in oven for about 18 minutes, turning the pan halfway through.
