Slow Cooker Shredded Chicken Tacos

Slow Cooker Shredded Chicken Tacos are so easy to make. They are full of flavor and take less than ten minutes to prep. All of your ingredients go in the slow cooker and it does the work for you! You can enjoy these Slow Cooker Shredded Chicken Tacos that taste just like they came from your favorite Mexican Restaurant!

Seriously, I’m obsessed with Mexican food – mainly Tex-Mex, but fajitas, tacos, burritos, cotija, and don’t even get me started on guacamole! We live in a small town and don’t have many options for Mexican food. And let’s just say the Mexican Restaurants we do have leave a lot to be desired.

That’s why I love cooking up my own delicious Mexican whenever I can! I’m sharing this Chicken Taco Recipe with you because it’s soooo delicious and EASY!

Slow Cooker Shredded Chicken Tacos

To make the chicken for these amazing tacos you’ll need chicken breasts, salsa, a can of roasted tomatoes with chiles (like Rotel, store brand works fine too!), and cilantro!

Turn your crock pot on low add your chicken breasts in an even layer on the bottom. Next, add your cans of Rotel. Add two tbsp of salsa. Finally, add the cilantro, green onions, & tomato wedges.

Let the chicken cook on low for about 4-6 hours. Flipping them over a few times. The amount of time it will take depends on the thickness of your chicken breasts and the amount you use. The Chicken is fully cooked when it reaches an internal temperature of 165. The best way to measure this is with a meat thermometer. You can tell that it is ready to temp when it starts shredding on its own.

Keep the Slow Cooker on low. Chop the chicken into smaller sections. Make any sides you’ll be having for the tacos. I love to do beans and rice.

Finally, prepare your tortillas and any toppings you’d like! Below is a list of our favorite taco toppings to get you started!

Taco Toppings

  • Avocado Slices
  • Guacamole
  • Salsa
  • Diced Tomatoes
  • Shredded Lettuce
  • Shredded Cheese
  • Grillee Corn
  • Sour Cream
  • Cotija Cheese

Slow Cooker Shredded Chicken Tacos

Serves: 8-10 Cooking Time: Slow Cooker : About 6 hours


  • 4-5 Chicken Breasts
  • 1 Can Rotel (I used Fire Roasted)
  • 1 Cup of Salsa
  • 1 Cup of Cilantro
  • 2 Tbsp of Green Onion
  • 1 Tomato (wedged)



Place 4-5 large chicken breasts in the crock pot.


Add a can of Rotel.


Add salsa, cilantro, green onions, and tomato wedges.


Turn crock pot on low.


Cover with lid and cook for about 6 hours, flipping chicken over halfway through cook time.


After chicken reaches 165 degrees internally.


Use two forks to shred .

    I loved this recipe. I actually made the this chicken recipe and put inmate on top of my left over Baked Lemon Pasta.
