S’mores Chocolate Chip Cookies

I love S’mores Chocolate Chip Cookies! The ooey gooey marshmallows, sweet creamy chocolate, and crunchy graham cracker crumbs channel everything you love about traditional S’mores. Plus, they’re super easy to make – no fire pit necessary ;).

When I think back to summer circa 1990 something I remember roaming the neighborhood with the other kids riding our bikes all over the place, chasing the ice cream man down, having kick ball tournaments, and water balloon fights . Finishing the night off under the stars making S’mores. And these cookies have all of the nostalgic flavors I need to take me right back to the good old days!

S’mores Chocolate Chip Cookies

Mix your dry ingredients- the flour, baking soda, salt,and brown sugar in a large bowl. Add your eggs, vanilla, and butter. Beat gently until all of the clumps are gone.

Pulverize your graham crackers in the food processor . Gently toss in 2/3 of your marshmallows, chocolate chips, and graham cracker crumbs. (Save the rest to place on top – which we’ll talk about in a second!)

Now, Chill your dough for about thirty minutes and preheat your oven to 350 degrees.

Place a piece of parchment paper on a cooking sheet. Roll your cookie dough into small balls about an inch or so around. Place them on the parchment paper a few inches apart so that they have room to expand when they bake.

Bake in the oven for about 8 minutes. Pull them out and on top of your cookies lightly place a pinch of chocolate chips & marshmallows. Then sprinkle with graham crackers. Return them to the oven and bake for an additional 2-4 minutes or until baked throughout and golden brown on top.

Allow them to cool on a cookie rack. 😋 If you do have any extras you can place them in the freezer and keep them for an extra 2-3 weeks!

Ingredients

  • 2 and 1/3 cups all-purpose flour
  • 1 1/2 Cup Chocolate Chips
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 Tbsp Vanilla Extract
  • 2 sticks unsalted butter (room temperature)
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup marshmallows
  • 1 Cup Graham Cracker Crumbs (or about 3 graham cracker sheets pulverized)
