These Soft and Chewy Gingerbread Cookies are the perfect Holiday treat. Seriously ..the softest and the most delicious! Sugar & spice and everything nice!
This is actually my first time attempting Gingerbread it’s never been one of our Holiday Cookie staples. To be honest I think I’ve maybe had it once in my life. But, they are now a new family favorite! These literally came out with the perfect texture and the perfect combination of ginger, cinnamon, and sweet brown sugar!
Soft and Chewy Gingerbread Cookies
In a large bowl combine the cinnamon, ginger, brown sugar, and granulated sugar. Next, add the flour, baking soda, vanilla extract, and salt.
Mix in the melted butter and molasses. Add the egg. Again, mix well.
At this point you want to wrap the dough in saran wrap and refrigerate for 2 hours or more. I left mine in the refrigerator overnight.
When you’re ready to bake, pull the dough out of the fridge about thirty minutes prior. Preheat the oven to 350 degrees. On a floured surface or on parchment paper, roll your dough out with a rolling pin. Now use cookie cutters to cut your desired shapes from the dough.
These don’t have to be limited to Gingerbread Men! I also did some little trees and this dough is great for reindeer! In addition, I decorated some of the Gingerbread Men with some red hots prior to baking.
Spray a cooking sheet with non-stick cooking spray. Place your cookies on the sheet leaving a few inches between each one. Bake them for about ten to twelve minutes. I always like to turn my pan around half way through, so that they cook more evenly. Once they’re done baking, allow them to cool on a rack.
Serve them as is or decorate until your heart’s content! I made Creamy Cinnamon Vanilla Icing to use on mine. It was quick and easy. I mixed 2 cups of confectioners sugar with a 1/4 cup of Cinnamon Roll Flavored Coffee Creamer, 1 tbsp vanilla extract, and a 1/4 cup of milk. If you need it thicker, simply add more sugar!
