Strawberry Kiwi Popsicles

Whether summer has actually arrived where you live or, you’re just pretending it has like us! These Strawberry Kiwi Popsicles are everything and you need to make some asap!

A couple of weeks ago I bought a Popsicle Mold on Amazon which I love dearly. I feel like the possibilities are endless! If you can think it, you can make it. These Strawberry Kiwi Popsicles are made with only four ingredients.

When you make popsicles at home you know exactly whats in them and these are made with fresh fruit and juice!

Strawberry Kiwi Popsicles

Start by cutting your kiwi into thin slices. Set them aside.

Next, slice up your strawberries. Put them into the food processor (or a blender). Pour in your juice. Add the vanilla. Blend well!

Finally, pour the liquid into your popsicle mold leaving about a 1/4 inch from the top empty.

Place them in the freezer for about thirty minutes. Your goal is to get them nice and slushy.

Once they are slushy you place your kiwi slice in the strawberry slush mixture, using a knife to position them where you want them. I pushed mine down a little, as i want it to be on the top of the popsicle when it comes out.

Lastly, place your wooden popsicle stick in the middle. Do not press it all the way in, leave a few inches of it sticking out! My mold had a lid so I placed that on first.

If yours does not have a lid you can use a piece of parchment paper over the top and poke the wooden sticks right through that. Put them back in the freezer until they’re frozen solid. Mine took about three hours until it was solid all of the way through.

Run the mold under a little bit of warm water to loosen them, IF you have any trouble getting the popsicles out. Just be careful not to do it for too long or with too hot of water, you do not want your popsicles to melt!

Strawberry Kiwi Popsicles

Serves: 12 Cooking Time: 8 minute prep/ 1 hr + freeze time

Ingredients

  • 1 lb Strawberries
  • 2 Kiwis
  • 1 Tbsp Vanilla Extract
  • 1/4 Cup of Sugar
  • 2 Cuos of Juice (I used White Cranberry Strawberry)

Instructions

Once they are slushy, remove them from the freezer and add a kiwi slice to each popsicle.

Place a popsicle stick in the middle of each popsicle.

Return the popsicles to the freezer until they are frozen solid!
