Easy Easter Cupcakes

I love baking. Any excuse to make sugary treats and I’ll take it. I love Easter treats, like Mini Chocolate Egg Blondies or Carrot Cake Creme Pies. But, today I was thinking frosting.. lots of frosting. So, I opted for these Easy Easter Cupcakes. They don’t take long to make, plus they’re topped with pastel colored sprinkles & peeps! They even have peeps in the batter !

I’m making these with a vanilla cake box mix . The reason I’m doing this is to save time. I am, however going to make a few substitutions to make it taste like homemade!

Mini Chocolate Egg Blondies

We just finished celebrating Easter over here, but the house is still covered in plastic eggs and to be honest, more chocolate than either of us need;)… I kind of have an obsession for Mini Cadbury Eggs. So, when I saw the ten pound bag at Costco, I had to buy them. Just kidding, it wasn’t ten pounds. But, it might as well have been right? Lightened Up Carrot Cake Cupcakes

My son loves carrot cake , I think that has a lot to do with his love for Peter Rabbit. I’m not a big fan of carrots in general.. But, I find it hard not to love Carrot Cake? Its sweet, and spiced just right. You can even feel good about yourself for getting some carrots in for the day right? Or are those just lies I tell myself..Wink wink, nudge nudge.

Well, you can if you make a few “lighter” changes! So, this is my lightened up version of Carrot Cake Cupcakes topped with Vanilla Cashew Frosting (Dairy Free). Continue Reading…
